做法:洗净宰好(hǎo )鲫鱼,洗净淮山(shān )和(hé )薏米。用清水把陈(chén )皮泡(pào )软(ruǎn ),拍裂(liè )一小(xiǎo )块姜,热(rè )锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
