做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入(rù )少量清水半掩住(zhù )春笋,盖上锅(guō )盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
