做法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一(yī )遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和(hé )其(qí )他材(cái )料,武火煮沸,转中(zhōng )小(xiǎo )火煲一个半小(xiǎo )时,下(xià )盐(yán )调味即可品尝。
