做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
