做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅盖焖。
