做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米(mǐ )。用(yòng )清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一遍(biàn ),放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲(bāo )一个半(bàn )小(xiǎo )时(shí ),下盐调味即可品尝。
