做法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和(hé )薏米。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放(fàng )两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中小火煲一个半(bàn )小(xiǎo )时,下(xià )盐(yán )调味即可品尝。
