做(zuò )法:春笋切成(chéng )片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
