做法:春笋切(qiē )成(chéng )片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
