做(zuò )法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
