做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐(yán ),翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
