做法:春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大(dà )火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
