做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热(rè ),倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖(mèn )。
