做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块在锅上擦一遍,放两勺(sháo )油(yóu ),待(dài )油六成热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放入(rù )煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。
