做(zuò )法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上擦一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲(bāo )一个半小(xiǎo )时,下盐(yán )调味即可(kě )品尝。
