做法(fǎ ):春笋(sǔn )切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水半掩住(zhù )春(chūn )笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
