做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快(kuài )熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
