做(zuò )法:春(chūn )笋切成(chéng )片后加少许(xǔ )盐(yán )捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
