做法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加(jiā )入(rù )少(shǎo )量(liàng )清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
