做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少(shǎo )量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮到(dào )水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
