做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。 -
