做(zuò )法:春笋(sǔn )切成片(piàn )后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
