做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在(zài )锅(guō )上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的(de )鲫鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时(shí ),下盐调味即可品尝。 -
