做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂一小(xiǎo )块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放(fàng )两勺油(yóu ),待油(yóu )六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清(qīng )水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品尝。 -
