做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用(yòng )姜块在锅(guō )上(shàng )擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸(fèi )瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火(huǒ )煲一个半小(xiǎo )时,下盐调(diào )味即可品尝。
