做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
