做法:洗(xǐ )净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺(sháo )油,待油六成热下(xià )鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和(hé )其他材料,武火(huǒ )煮沸,转中小火煲(bāo )一个半(bàn )小时,下(xià )盐调味即可品尝。
