做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
