做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅(guō )上擦一(yī )遍,放两勺油(yóu ),待(dài )油(yóu )六(liù )成(chéng )热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小火(huǒ )煲(bāo )一个(gè )半(bàn )小时,下盐调味即可品尝。
