做(zuò )法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到(dào )水(shuǐ )快熬(áo )干的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
