做法:春笋切成片后加少许盐捞出后(hòu )用清水(shuǐ )浸(jìn )泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖(gài )焖。
