做法:春(chūn )笋切(qiē )成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均(jun1 )匀(yún )稍收汁时盖上锅(guō )盖焖(mèn )。
