做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入煎煮好(hǎo )的(de )鲫鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中小火(huǒ )煲一(yī )个半(bàn )小时,下盐(yán )调(diào )味即可品尝。
