做法:洗净宰好鲫鱼,洗净淮山(shān )和(hé )薏米(mǐ )。用(yòng )清水(shuǐ )把陈(chén )皮泡软,拍裂一(yī )小块姜,热锅,用姜块在(zài )锅(guō )上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个(gè )半小时(shí ),下盐调味即可品尝。
