做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的(de )时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上(shàng )锅盖焖。
