做法:洗净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜块在锅(guō )上擦一遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中小火煲(bāo )一个半小时(shí ),下盐调味(wèi )即可品尝(cháng )。
