做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
