做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入(rù )少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
