做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切(qiē )成(chéng )段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
