做法(fǎ ):春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
