做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖(mèn )。
