做法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和(hé )薏米。用清水把陈皮(pí )泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅(guō )上擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一(yī )个半(bàn )小(xiǎo )时,下盐(yán )调味(wèi )即可品尝。
