做法:洗净宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜块在锅(guō )上擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸(fèi ),转中小火煲一个(gè )半小(xiǎo )时,下盐调(diào )味即可(kě )品尝。
