做法:春笋切成片后(hòu )加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大(dà )火煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖(gài )上锅(guō )盖焖。
