做法:洗(xǐ )净宰好鲫鱼(yú ),洗(xǐ )净淮(huái )山和(hé )薏米。用(yòng )清水把陈(chén )皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一(yī )个(gè )半小时,下盐调味即可品尝。
