做法:洗净(jìng )宰(zǎi )好鲫鱼,洗净(jìng )淮山和薏(yì )米。用(yòng )清(qīng )水把陈皮泡软,拍裂(liè )一(yī )小块(kuài )姜(jiāng ),热(rè )锅,用姜块(kuài )在锅上擦一遍,放(fàng )两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材料,武(wǔ )火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝。
