做法:春笋(sǔn )切成(chéng )片后(hòu )加少(shǎo )许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的(de )时(shí )候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
