做法:洗净宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块(kuài )在(zài )锅上(shàng )擦一遍,放两(liǎng )勺油,待油(yóu )六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个(gè )半小时,下(xià )盐调味即可品尝。
