做法:春笋切(qiē )成(chéng )片后加少许盐捞(lāo )出(chū )后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
