做法:春笋切(qiē )成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的(de )时候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
